Shannon Exelby has been a leader and innovator in the tourism industry for two decades, managing some of Australia’s most iconic hotels and resorts.
“Ive always loved the ocean and surfing. In 2002 I traded my surfboard for a snowboard when I moved to Canada to work and Ski Whistler Blackcomb. It was supposed to be a short term adventure, but after meeting a local Canadian girl who I would later marry -ski fields, snow storms and red wine around a fireplace became a permanent fixture in my life.”

David joins the team at Astra as Venue Manager
David began his hospitality journey in the kitchen and acquire and ran his first restaurant from the kitchen, a well-known and much loved eatery on the foreshore of Hardy’s Bay, NSW.
In 2018, the mountains and regional dining scene lured David and his family to Bright, Victoria where he opened Elm Dining and later The Yard Bar & Grill where David made his transition from Head Chef to Host building a far reaching community connection. We are excited to work with David, bringing local knowledge and passion to the dining experience.
Jude is from a small town in central Victoria, called Nagambie. She was born in Northern Ireland and came to Australia 18 years ago. Jude loves all things wine, as a certified sommelier, currently studying her WSET level 4 and is qualified in winemaking, wine show judging and a viticulturist. Her passion lies in food and wine pairing and finding the best flavour matches.
New to Astra this season Greg joins us having earned his stripes in many of Australia’s top 5 star luxury accommodations.
He has adapted to the cold having grown up in the Macedon Ranges, Victoria where Winter is true holding the record of the coolest wine region on the Australian mainland. Moving abroad and studying the wine industry in places such as the UK, France, Canada and New Zealand, he has visited many of the world’s great wine regions. Allow Greg to take you on a journey through wine!
Kyle comes to Falls Creek from South Australia and Camilo from Chile. Kyle & Camilo are your friendly concierge and over snow drivers and a guest favourite.
Rubie has spent much of her career working in Island resorts in Australia and Overseas. Most recently managing spa’s in the Maldives, Rubie comes with high level experience and for better or worse finds all the sore spots.
Tara joins the Astra team again this year as House Keeping Manager following her first season last winter. Tara grew up in Canada and her favourite places are fabulous Whistler and Revelstoke where she returns most years to ski and visit family.
Tara has worked in some of Australias best resorts and Hotels since moving to Australia in 2004
Jack joins Astra for his first snow season at Falls creek. Jack was born and raised in Dorset England – a place of fine food and fantastic produce. He started working in kitchens at the age of 13 and his passion for food developed therein as did his desire to be a chef. After training in Michelin stared restaurants around the UK he moved to Melbourne Australia to work at the highly acclaimed Vue De Monde.
In 2016 Jack opened his restaurant Sunset Food And Wine on Kangaroo Island South Australia and has gone on to win multiple awards including The Australians ‘hot 50’ 2019 & The restaurant & catering best regional restaurant 2018.
