Tom along with his wife Sally, have been with Astra since its rebirth in 2015.

After living and working in Canada, they decided to return to Australia and reside in the picturesque Falls Creek where they are raising their sons Bobby and Archie.

Sally, originally from Albury and Tom from Bottesford, England welcome you to a place that is both remarkable and unique. Together they strive to create a retreat that satisfies all desires!

Bruno Da Motta is the Brazilian-born, globetrotting chef/restauranteur engaged by Traverse Alpine Group who look after Astra to prepare the food and beverage options in this Response.

Bruno is an internationally experienced visionary in his field, with expertise in all aspects of hospitality. He is the principal of Achieve & Co, a Sydney-based hospitality consultancy.

Bruno has 17 years’ experience in global hospitality trends and a deserved reputation for excellence. As well as qualifications in commercial cookery and haute cuisine, Bruno has diplomas in management and food service administration.

Bruno’s life’s mission is to be at the cutting-edge of innovation and standards in the hospitality and entertainment industry. He believes in keeping ingredients fresh, presentation simple and flavour set to “max”.

Janis Mallet

Head Chef

A word from our new Head Chef, Janis Mallet.

Hello my name is Janis Mallet,

I am a young French chef and recently arrived in Australia. I started my culinary journey in France where my passion for cooking originated from my mother.

It was from her that I learned to seek the pleasure in tasting the food and to respect each season’s natural, fresh produce.

I started cooking in my native region of Southern France and then moved to Paris where I was working at Maison Prunier—one of the finest seafood restaurants in Paris.

From there I journeyed to Chateau Mazan, where I remained as Sous Chef for six years under the watchful eye of Head Chef Yann Foucher. 

I am happy to be in this beautiful country, seeing the huge potential and opportunity to use many beautiful products. I’ll wait for you at Astra Falls Creek to share the good times.

Astra’s Sommelier

Back for his second season here in Astra, Luis. Born in Mexico City brings to Astra’s world class wine cellar a BA degree in Gastronomy and diploma in wines. He likes everything about wines, from tasting to walking amongst the vines.

Astra welcomed back the very talented Toby Burrowes for the second consecutive year this August working along side our Head Chef Janis Mallet. 

Together, they created a wonderful culinary experience which pleased the Falls Creek crowds. 

The Astra x Elystan Street collaboration is so unique and we hope to continue this fantastic relationship in the future.
